Smoked Salmon & Prawn Cocktails With a cucumber, celery & avocado relish.
A refreshing starter for any special event, this one is made with fresh cucumber and celery, complimenting the salmon and prawns perfectly.
Ingredients

Crispy salad leaves
-
9 large cooked prawns
-
100g smoked salmon
For the relish -
¼ cucumber, cut into tiny dice
- ½ avocado diced
- 1 small stick celery, cut into tiny dice
- Juice of ½ lemon or lime
- 2 tbsp fat free French dressing
To garnish -
Diced pepper or fresh chilli
To garnish -
Diced pepper
Method
- Mix all the relish ingredients in a small bowl.
- Arrange salad leaves in Martini flutes or champagne glasses.
- Add salmon and relish ingredients and top with cooked prawns.
Serves 3
