Tossed with a light tomato dressing that’s sweet, tangy and full of flavour, it’s an effortless dish that feels both hearty and refreshing.
Giant Couscous With Smoked Fish, Tomatoes & Rocket
Ingredients
- 200g giant couscous
- 200g assorted baby tomatoes, halved
- 200g Smoked Mackerel or Trout
- Handful of Rocket leaves
Tomato Dressing
- 1 tbsp tomato paste
- 3 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- ¼ tsp garlic powder
- 1 tbsp honey
- 1 tbsp hot water
Method
- Cook couscous as directed on the packet and rinse in cold water.
- Arrange couscous in a salad serving bowl or on a plate.
- Top with tomato halves, Mackerel or Trout pieces and a scattering of rocket leaves.
- Mix together the tomato dressing ingredients with a small whisk or fork in a small bowl and place alongside the salad or drizzle over the top of the salad before serving.
- Serve with boiled or steamed rice.
