Chocolate pancakes with black cherries, perfect for pancake day, perfect for National Cherry Day on the 16th July, in fact perfect anytime! Also cherries are well known for their antioxidant properties; healthy and delicious!
For the grown-ups you can add a little Cherry Brandy or Kirsch to the canned black cherries and leave to marinate when you make the batter... Recipe by food demonstrator & home economist, Teresa Bovey.
80g self-raising flour
15g cocoa powder
15g caster sugar
Butter or oil for frying
Canned or fresh black cherries
Yoghurt or single cream
- Blend or whisk together the eggs, milk, flour, cocoa powder and caster sugar to form a smooth batter and leave in the refrigerator for ½ hour.
- Grease a 6-7 inch frying pan with butter or oil and pour in a small ladleful of the pancake mixture. Once set flip the pancake over and cook for a further minute.
- Repeat with the remaining mixture to make 6 or 7 pancakes.
- Serve with black cherries and yoghurt or single cream.
Makes 6-7 x 6 inch pancakes
